Mary C. Coleman, a resident of the Hideout in Lake Ariel, PA, for more than 20 years, died Thursday, June 30, at the Julia Ribaudo Extended Care Center in Lake Ariel, PA, after a relatively brief illness.
She retired as a full professor of experimental foods in the College of Health and Human Development at Pennsylvania State University in 1989, after 20 years teaching at Penn State. Before that she taught at Michigan State University for 13 years. A native of Buffalo, NY, she received a bachelor’s degree in nutrition from Michigan State University, a master’s degree in nutrition from the University of Iowa’s College of Medicine, and a doctorate (PhD) from Michigan State University.
She was the daughter of the late Leo and Anne Coleman of Kenmore NY. Surviving are a sister, Elizabeth Kraus of Snyder NY, and a brother Leo Coleman of Glens Falls NY, as well as nieces and nephews. She was predeceased by her sister Patricia Carriero of Angola NY.
Mary C. was an avid golfer and a dedicated bird watcher as well as an accomplished gardener. In 1982, while a professor at Penn State, she visited China to collect information on the cultural aspects of food there, especially the high fiber and low fat and low sugar diet of many Chinese. While in China she was invited to lecture at to Beijing Dietetic Association on the “current trends in diet therapy.”
She was a member of the American Dietetic Association and at one time served as chairman of the Dietetic Internship Board. She was also active years ago in the Institute of Food Technologists.
There will be no calling hour or services at the request of Mary C. Coleman.
